Goat Cheese Za’atar Walnut Rolls
The Idea
This is one of those things that looks like it took way more effort than it did.
It didn’t.
It’s just flaky pastry, a really good filling, and not being shy when you spread it.
How to Think About It
I don’t really cook by strict recipes for things like this. I think in components so I can use whatever I already have.
A simple way to build something like this:
- Creamy → goat cheese (this gives you that soft, rich base)
- Savory/deep flavor → onions (caramelized or raw, this is what makes it feel like real food)
- Fat/richness → olive oil (helps everything spread + carry flavor)
- Spice/herb → za’atar (this is where personality comes in)
- Texture → walnuts (so it’s not flat or one-note)
Once you understand that, you can literally look around your kitchen and build your own version.
No walnuts? Use seeds or skip. No goat cheese? Use feta, cream cheese, or anything spreadable. No za’atar? Use any spice blend you like.
The goal is just: something creamy + something flavorful + something with texture
That’s it.
What I Used
(but use whatever you have)
- Puff pastry
- Goat cheese
- Olive oil
- Za’atar
- Finely chopped walnuts
- Caramelized onion jam
- Black pepper
- A little honey
How I Made It
- Mixed everything into a thick spread
- Rolled it out edge to edge (this part matters)
- Rolled it up tight
- Chilled it a bit
- Sliced and baked until golden
Small Note
Your ingredients don’t have to match mine exactly.
Seriously.
Swap what you need to—just keep the balance:
- creamy
- flavorful
- some texture
And make sure the filling is thick enough to actually show in the swirl.
What I’d Do Again
Next time I’d add even more filling. It was my first time rolling it, so I didn’t want to overstuff it.
That’s really the difference between “good” and “oh this is actually really good.”
